Ingredients:
- 3 ripe avocados, stone removed
- 1 bunch of coriander, chopped
- 1/4 cup lime juice
- 1 spring onion, sliced
- 1-2 small red chilies, seeds removed and finely chopped
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
Place all of the ingredients except a small amount of coriander in a blender and blitz. Spoon into a bowl and top with the leftover coriander.
Makes a great starter with homemade wholemeal tortilla chips 🙂
