• 2 cups of rolled oats
  • 1/2 cup natural peanut butter
  • 3-4 rows of dark chocolate, chopped into chunks
  • 2 free range eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup brown sugar
  • 1/4 cup shredded coconut
  • 1 tsp vanilla extract
  • 1 tsp baking soda


Preheat the oven to 180 °C fan bake and line two oven trays with baking paper.

Put the oats in a food processor and blend until fine.

Combine all of the ingredients, except the choc chunks, together in a large bowl and mix well. Then fold in the chocolate chunks.

Use a tablespoon to scoop out the cookie dough. With your hands roll into balls and place onto the baking trays (8 per tray, well spaced). Use a fork to flatten each cookie.

Bake for ~10 minutes or until golden.

Makes 16 cookies
