SNACK BALLS

Ingredients:

Ginger and Apricot
• 1 cup of dates, chopped
• ½ cup dried apricots, chopped
• 1 cup nuts (almonds and cashews)
• ¼ cup coconut
• ¼ tsp ground ginger

Peanut Butter
• 1 cup of dates, chopped
• ½ cup almonds and 1/4 cup peanuts
• ¼ cup natural peanut butter
• 1 Tbsp honey
• ¼ tsp cinnamon

Instructions:
• Add all ingredients into a blender and blitz.
• Roll out into balls (slightly smaller than a golf ball).
• Roll in coconut / cocoa / cacao / ground almonds (optional)
• Store in the fridge

Makes 20 balls approx
